From the original plantings this wines is made from some of the oldest Semillon and Sauvignon Blanc grapes in Margaret River. On a steep gravely slope these old dry grown vies have penetreated their roots through the rocky dirt to find enough water to produce a very small crop of bright and variettally expressive Semillon and Sauvignon Blanc.
Winemaking
Petit Verdot, along with Cabernet Sauvignon, Merlot and Cabernet Franc is an integral component of the world’s greatest red wine. It is rarely seen on its own – for reasons that may be related to fashion more than any other wine reason, it is, undoubtedly, a great red wine variety producing wines of outstanding intensity and depth of fruit flavour. Hay Shed Hill has a long tradition of showcasing varieties such as Cabernet Franc and Petit Verdot from an outstanding vineyard site in the heart of Margaret River.
The Petit Verdot fruit from Block 10 on the Hay Shed Hill property was harvested and fermented in open topped vessels with twice daily pump overs to aid the extraction of colour and flavour. The resultant wine was matured for 18 months in French oak barriques prior to bottling and further maturation in bottle for over a year to allow the wine to be ready for drinking on release.
Nose
Intense dark berry aromas; blackcurrant and deep ripe cassis with a peppery hint.
Palate
An intense and deep palate profile rich in very ripe rich berry fruits, soft and fleshy mid palate and a firm but ripe tannin profile with good extension.
